Preparation

  • Start by heating 2 tablespoons of olive oil in a large pot over medium-high heat.
  • Season your beef pot roast generously with salt and black pepper.
  • Sear the roast on all sides until beautifully browned, sealing in the juices. Remove the roast and set it aside on a plate.

Cooking

  • In the same pot, add the sliced onions and minced garlic. Sauté them together, stirring until the onions become caramelized and golden brown.
  • Pour in the apple cider, making sure to scrape the bottom of the pot with your spatula to deglaze.
  • Return the browned pot roast to the pot. Tuck fresh thyme sprigs, chopped carrots, and celery around the roast.

  • Once the roast is tender, remove it from the pot and slice it against the grain for the best texture.
