Preparation

  • In a mixing bowl, combine the flour, baking powder, a pinch of salt, and pepper. Whisk until smooth.
  • In another bowl, beat the eggs and milk together until frothy.
  • Gently pour the egg mixture into the dry ingredients and stir until just combined.
  • Fold in the corn and parsley carefully.
  • Heat the olive oil in a skillet over medium heat until shimmering.

Cooking

  • Drop spoonfuls of batter into the skillet and fry until golden brown, about 3 minutes per side.
  • Transfer the fritters onto paper towels to drain excess oil.

Notes
