Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  • In another bowl, whisk the pumpkin puree, heavy cream, egg, and vanilla until smooth.
  • Gradually combine the wet and dry ingredients, mixing gently until just combined. Fold in chocolate chips or nuts if desired.

Shaping and Baking

  • Turn the dough onto a floured surface and shape it into a circle about 1 inch thick.
