Preparation

  • Begin by warming a heavy-bottom pot over medium-low heat and add the avocado oil.
  • Add the finely chopped onions, the white part of the scallions, and minced garlic. Sauté until the onions become softened and translucent.
  • Stir in the chopped mushrooms. Allow them to cook until tender.
  • Mix in the red Thai curry paste, followed by a hint of sugar for balance. Ensure every ingredient is well combined.
  • Gently pour in the vegetable broth, bringing the mixture to a lively simmer.
  • Stir in the creamy coconut milk, bringing the soup back to a gentle simmer.

Cooking

  • Add the frozen dumplings to the pot, allowing them to warm through on medium-low heat for about 7 minutes.
  • Once the dumplings are heated through, ladle the soup into bowls and garnish with chili oil, scallion greens, crispy garlic, and fresh cilantro.

Notes

To save time, chop ingredients in advance. For a richer flavor, let the soup simmer longer before adding the dumplings.
