Ganache & Toppings

Instructions
 

Preparation

  • Cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • Gradually incorporate the all-purpose flour, cocoa powder, baking soda, salt, and espresso powder (if using).
  • Mix until a thick dough forms.

Chilling & Baking

  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Once chilled, scoop the dough into balls and press a small well into the center of each ball.
  • Place the cookie dough balls on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  • After baking, re-press the centers to maintain a space for ganache while they cool completely.

Making Ganache

  • Pour hot heavy cream over the finely chopped chocolate chips and optional butter in a heatproof bowl.
  • Stir until the mixture is completely smooth. Allow it to cool slightly before filling the cookie centers.

Assembly

  • Using a piping bag or a spoon, fill the cooled cookie centers with the ganache.
  • Decorate with freeze-dried raspberries, heart sprinkles, or a drizzle of melted white chocolate.
