Preparation

  • Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing it lightly.
  • Cut the tops off the peppers and carefully remove the seeds. If necessary, trim the bottoms slightly to stabilize them upright.
  • Blanch the peppers: Bring water to a boil and immerse the peppers for about 3-4 minutes until they are tender. Remove and set aside.
  • Sauté the vegetables: In a skillet over medium heat, melt the butter. Add the diced celery and chopped green onions, cooking for about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
  • Mix the stuffing: In a mixing bowl, combine the sautéed mixture with crabmeat, panko breadcrumbs, cayenne pepper, salt, and black pepper. Mix gently to avoid breaking apart the crab.
  • Stuff the peppers generously with the crab mixture, and top each with a sprinkle of shredded cheese.
  • Arrange the stuffed peppers in the greased baking dish and bake for 25-30 minutes until the cheese is bubbly and golden brown.
  • Cool slightly for about 5 minutes before serving.

Notes

For a gourmet touch, consider using fresh crab instead of canned. Experiment with different spices like Old Bay or paprika for added flavor depth. Adding extra vegetables like spinach can boost nutrition.
