  • 1 cup fresh cranberries Rinsed and cleaned
  • 1/2 cup granulated sugar Adjust to taste
  • 1 cup heavy cream For a rich texture
  • 1/2 cup whole milk For creaminess
  • 1 tsp pure vanilla extract For flavor depth

Preparation

  • Rinse the fresh cranberries under cool water to ensure they are clean. Remove any stems or blemished berries.
  • Place the rinsed cranberries in a saucepan over medium heat. Add the granulated sugar and cook for about 5 minutes, stirring occasionally, until the cranberries pop.
  • Allow the cooked mixture to cool slightly, then pour it into a blender and blend until smooth, retaining some texture from the berries.
  • In a large mixing bowl, whisk together the heavy cream, whole milk, and pure vanilla extract. Fold in the blended cranberry mixture.
  • Cover the bowl and refrigerate the mixture for 2 hours.
  • Churn the mixture in an ice cream maker for 20-25 minutes until soft-serve consistency is reached, or freeze it in a shallow dish, stirring every 30 minutes until set.

Notes

To elevate the flavor, you can add a pinch of salt or fold in chopped nuts or white chocolate chips. A splash of lemon juice can enhance the cranberries’ brightness.
