  • Optional zest from 1 lemon Enhances the citrus aroma for extra flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the softened butter and mix until crumbly. Incorporate the egg yolk and cold water until the dough comes together.
  • On a floured surface, roll out the dough to fit your tart pan.

Baking the Crust

  • Prick the bottom of the dough with a fork to prevent puffing. Place parchment paper over the dough and add pie weights or dried beans. Bake for 15 minutes.
  • Remove weights and parchment and bake for another 10 minutes until lightly golden. Allow it to cool completely.

Making the Filling

  • In a saucepan over medium heat, combine the heavy cream and chopped white chocolate. Stir until smooth and glossy.
  • In a separate bowl, mix the cranberries, granulated sugar, and lemon juice. Allow it to sit for about 10 minutes.

Assembling the Tart

  • Pour the melted white chocolate filling into the cooled tart shell, distributing it evenly.
  • Sprinkle the cranberry mixture over the top.

Final Baking

  • Return to the oven and bake for 15-20 minutes until cranberries are softened and filling is set.
  • Allow the tart to cool to room temperature.

Chilling

  • Refrigerate the tart for at least an hour before serving to enhance flavors.

Notes

For best results, chill the dough for about 30 minutes after mixing. This tart can be made a day ahead and stored in the refrigerator.
