Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion to the skillet and sauté until translucent, about 2-3 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the sliced mushrooms to the skillet and cook until they are golden brown, stirring occasionally, roughly 5-7 minutes.
  • Stir in the orzo and allow it to toast slightly for about 1-2 minutes.
  • Gradually add the vegetable broth to the skillet, bringing the mixture to a simmer. Cook uncovered for about 10-12 minutes, or until the orzo is tender and the broth is mostly absorbed.
  • Once the orzo is cooked, stir in the fresh spinach and cook until wilted.
  • Pour in the cream, mixing to create a luscious, creamy texture. If using cheese, stir in the grated Parmesan.
  • Taste your dish and season it with salt and pepper as desired.
  • Remove from heat and serve while warm, garnishing with extra cheese if desired.

Notes

To enhance your Creamy Orzo, consider using different types of mushrooms, adding herbs for depth, or including toasted nuts for texture. For a protein boost, grilled chicken or chickpeas can be added.
