Preparation

  • Season the chicken breasts generously with smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear the seasoned chicken breasts for about 4-5 minutes on each side.
  • Remove chicken from the skillet and set aside. Sauté chopped onion and minced garlic in the same skillet until soft and translucent.
  • Pour in chicken stock, then stir in heavy cream, peri-peri sauce, and lemon juice. Simmer until the sauce thickens.
  • Return the chicken to the skillet and simmer until fully cooked through, reaching an internal temperature of 165°F.

Serving

  • Scoop the creamy peri-peri chicken over cooked rice and garnish with freshly chopped parsley before serving.

Notes

Consider adding fresh veggies like bell peppers or spinach during the sauté phase. For milder sauce, balance with added cream or sugar. Chicken can be marinated in peri-peri sauce overnight for extra flavor.
