  • 4 pieces boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1.5 cups chicken broth
  • 3 tablespoons cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1.5 teaspoons Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/3 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup freshly grated parmesan cheese
  • 10 leaves fresh basil, chopped

Preparation

  • In a small bowl, mix the salt, garlic powder, onion powder, and black pepper. Generously season the chicken breasts on both sides with this herbaceous mixture.
  • Heat the olive oil and butter in a large skillet over medium-high heat. Sear the chicken until it’s golden brown on both sides. Avoid cooking through completely as we’ll finish it off in the slow cooker. Set aside the pan drippings for later.
  • In a bowl, whisk chicken broth with cornstarch until perfectly smooth. Add this silky mixture to the slow cooker along with the heavy cream, minced garlic, and all seasonings: Italian seasoning, salt, black pepper, red pepper flakes, and paprika.

Cooking

  • Gently place the seared chicken into the slow cooker, pouring in the reserved pan drippings and chopped sun-dried tomatoes. Cook on low for 6-7 hours.
  • Once cooked, remove the chicken and whisk the parmesan cheese into the sauce until well combined. Return the chicken to the cooker, coating it with the rich sauce. Sprinkle fresh basil on top before serving.

Notes

For a healthier option, consider using unsweetened almond milk instead of heavy cream, or substituting coconut cream for a dairy-free version. Serve with sides like creamy mashed potatoes or steamed vegetables.
