Preparation

  • Begin by peeling and dicing the starchy potatoes into small cubes.
  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and sauté until translucent and fragrant.
  • Add the minced garlic and sauté for an additional minute.
  • Mix in the diced potatoes and vegetable broth. Bring to a gentle boil.
  • Reduce heat to simmer and cook until the potatoes are tender, about 15-20 minutes.
  • Stir in the fresh spinach and allow it to wilt in the soup.
  • Blend the soup until silky-smooth using either an immersion blender or a regular blender.
  • Return the blended soup to the pot and stir in the heavy cream or coconut milk.
  • Season with salt, pepper, and a pinch of nutmeg, adjusting to taste.
  • If using, stir in the Parmesan cheese until melted and creamy. Top with freshly chopped herbs before serving.

Notes

This soup stores well in an airtight container for up to 3 days in the fridge and can be frozen for 2-3 months. For a lighter version, substitute half of the heavy cream with low-fat milk or more vegetable broth.
