Preparation

  • In a small fry pan or skillet, spray cooking oil. Crumble feta cheese over the pan.
  • Sauté the feta cheese over medium heat for a couple of minutes until it melts and forms a golden crust.
  • Gently crack the egg into the center of the pan, season with oregano and red pepper flakes, and cook to desired doneness.
  • While the egg is cooking, warm the tortilla.
  • Smash avocado on the warmed tortilla, adding lemon juice.
  • Once the egg is cooked and feta is crispy, place it on the tortilla.
  • Garnish with pickled onions and drizzle with chili oil. Enjoy!
