  • 1/2 teaspoon garlic powder Aromatic seasoning.
  • 1/2 teaspoon paprika Adds smokiness and color.
  • Salt, to taste Enhances overall flavors.
  • Black pepper, to taste Adds gentle spice.
  • 1 tablespoon grated parmesan cheese (optional) Adds umami touch.
  • Fresh parsley, chopped, for garnish (optional) For color and freshness.

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Boil or steam the peeled carrots for 10 to 12 minutes or until fork-tender. Drain and cool slightly.
  • Place cooked carrots on the baking sheet and gently flatten each carrot using the bottom of a glass or fork to about half an inch thick.

Seasoning and Roasting

  • Drizzle olive oil over the smashed carrots, then sprinkle evenly with garlic powder, paprika, salt, and black pepper.
  • Roast the carrots for 20 to 25 minutes, turning halfway through until edges are crispy and golden.
  • If desired, sprinkle grated parmesan cheese over the carrots during the last 5 minutes of roasting.

Serving

  • Remove the carrots from the oven and garnish with chopped parsley. Serve warm.

Notes

For extra crispiness, space the smashed carrots well on the baking sheet. You can add cumin or cayenne for extra spice, and the recipe is perfect for meal prep as it stores well in the fridge.
