  • 8 ounces Cream cheese Adds creaminess to the frosting.
  • 1/2 cup Passionfruit pulp Brings a burst of tropical flavor.
  • 1 teaspoon Vanilla extract Elevates the overall taste profile.

Instructions

Preparation and Baking

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with butter. Dust them with flour.
  • In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  • In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well. Then, stir in the buttermilk and vanilla extract.
  • Gradually fold the wet mixture into the dry ingredients, stirring until just combined.
  • Divide the batter evenly between prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before transferring to wire racks.

Ganache and Frosting

  • In a saucepan over low heat, combine the heavy cream and dark chocolate. Stir continuously until smooth and melted. Remove from heat and cool.
  • In a mixing bowl, beat cream cheese until smooth. Gradually add cooled ganache and passionfruit pulp, beating until fluffy.

Assembly

  • Once cooled, place one cake layer on a serving plate. Spread frosting on top, then place the second layer on top. Frost the entire cake with remaining frosting.
  • Garnish with additional passionfruit pulp, chocolate shavings, or fresh fruits.

Serving

  • Slice and serve this indulgent cake to your friends and family.

Notes

To elevate your baking experience, ensure ingredients are at room temperature, use quality cocoa, and chill ganache if too runny. Check for doneness a few minutes before the recommended baking time.
