Instructions
 

Prepare the Crust

  • Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed Oreo cookies with melted salted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Make the Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and fluffy. Gradually add granulated sugar, mixing well between ingredients. Mix in coffee extract and optional espresso powder.

Add the Eggs

  • Add the eggs one at a time, mixing on low speed just until blended to avoid cracking.

Stir in the Cream and Coffee

  • Gently fold in heavy cream and cold brew coffee. Add lemon juice, salt, and optional flour.

Pour and Bake

  • Pour the creamy filling over the cooled crust. Bake for 60 minutes or until edges are set but center jiggles slightly. Turn off the oven, crack the door, and let cool in the oven for an additional hour.

Cool Completely

  • Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Prepare the Topping

  • Whip heavy cream with powdered sugar and vanilla extract to soft peaks. Spread over the chilled cheesecake and garnish.

Notes

Ensure all ingredients are at room temperature for better blending. Use a water bath for a creamier texture and allow proper cooling to prevent cracks.
