Instructions

Preparation

  • Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in fresh water for at least 30 minutes.
  • Soak a pinch of saffron threads in a small bowl of warm water.

Cooking

  • In a large pot, add the soaked rice, four cups of water, and salt. Bring it to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes until the rice is tender and all water is absorbed.
  • While the rice cooks, melt the butter or ghee in a small skillet over medium heat and toast the slivered almonds and pistachios until golden and fragrant.
  • When the rice is nearly done, stir in the soaked saffron water along with cinnamon, cardamom, dried barberries, apricots, golden raisins, sugar, and orange zest, folding gently.
  • Cover the pot and let it steam on low heat for an additional 10 minutes.
  • After steaming, fluff the rice gently with a fork to let the steam escape.
