For the Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts Tender and juicy, sliced into strips.
  • 2 Tbsp golden honey Adds sweetness to balance the lime.
  • 2 Tbsp soy sauce (or tamari) Provides savory depth.
  • 2 Tbsp fresh lime juice Brightens the flavors.
  • 1 tsp fresh lime zest Enhances the lime flavor.
  • 1 Tbsp olive oil Medium for cooking the chicken.
  • to taste none salt and freshly ground black pepper Essential for seasoning.

For Serving

  • 2 cups cooked jasmine rice Fluffy and fragrant base.
  • 1–2 pieces ripe avocados Silky and rich, sliced.
  • 2 Tbsp freshly chopped cilantro or chives Adds color and flavor.
  • 1 tsp toasted sesame seeds (optional) Adds crunch.
  • to taste none fresh lime wedges For garnish.

Preparation

  • In a medium bowl, whisk together honey, soy sauce (or tamari), fresh lime juice, lime zest, olive oil, salt, and pepper.
  • Add the chicken strips to the marinade, ensuring they are fully coated. Let marinate for at least 20 minutes.

Cooking the Chicken

  • Heat a large skillet over medium-high heat. Add the marinated chicken in a single layer.
  • Cook for about 3–4 minutes on each side until caramelized and cooked through.
  • Keep cooked chicken warm while assembling the dish.

Preparing Rice and Avocado

  • Pack the cooked jasmine rice tightly into a ramekin or measuring cup, then invert onto a plate.
  • Slice ripe avocados and arrange them atop the rice.

Assembling the Stacks

  • Pile the warm honey-lime chicken over the avocado layer.
  • Drizzle remaining pan juices over the top, sprinkle with cilantro or chives and sesame seeds, and garnish with lime wedges.

Notes

For even cooking, cook chicken in batches to avoid overcrowding. Customize toppings as desired.
