Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until smooth and creamy.
  • Add the egg and vanilla extract into the bowl. Blend until fully combined.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the peanut butter mixture, mixing until just combined.
  • Stir in chocolate chips and chopped nuts, if using.
  • Using a scoop, drop dough balls onto ungreased baking sheets, leaving space between each.

Baking

  • Bake for about 10-12 minutes until edges turn lightly golden.
  • Cool on baking sheets for 5 minutes before transferring to a wire rack.
  • Dust with powdered sugar before serving.

Notes

For a thicker cookie, chill the dough for 30 minutes before baking. You can substitute half of the chocolate chips for butterscotch or peanut butter chips for a unique flavor. A pinch of cinnamon can enhance the taste.
