Instructions
 

Preparation

  • Rinse 1 cup of dry lentils in cold water to ensure cleanliness.
  • In your slow cooker, combine the rinsed lentils, vegetable broth, minced garlic, and diced onion. Stir gently.
  • Add in the fresh thyme, fresh rosemary, and bay leaf.
  • Incorporate the finely chopped carrot and chopped celery.
  • Season with salt and black pepper to taste, and optionally add crushed red pepper flakes.
  • Stir everything together ensuring even distribution, then cover the slow cooker with the lid.

Cooking

  • Set your slow cooker on low for 6-8 hours or high for 4-5 hours.
  • Once done, remove the bay leaf and stir the lentils gently. Adjust seasoning as needed.

Notes

Lentils can be paired with rice, crusty bread, or salads. Avoid overcooking to prevent mushiness. Experiment with different vegetable broths for new flavors.
