Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with a light layer of cooking spray.
  • In a skillet, add your diced mushrooms and sauté them until they become soft and fragrant. Next, toss in the chopped spinach and let it cook until wilted.
  • In a large mixing bowl, whisk together the eggs and milk until combined. Then, add garlic powder, onion powder, salt, and pepper.
  • Gently stir in the sautéed mushrooms, wilted spinach, and shredded cheese. If using optional vegetables like bell peppers or tomatoes, add them now.
  • Pour the mixture into the prepared muffin tin, filling each compartment about 3/4 full.

Baking

  • Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are set and golden brown.
  • Allow the muffins to cool slightly in the tin before gently removing them. Serve warm or at room temperature.

Notes

For added flavor, sprinkle fresh herbs like parsley or chives before serving. You can also experiment with different types of cheese; feta or goat cheese would be great variations. For convenience, pre-chopped vegetables can save time during prep.
