Dressing Ingredients

  • 1 lime lime juice Tart and tangy, elevates flavors.
  • 3 tablespoons avocado oil Adds creaminess and depth.
  • 1 tablespoon red apple vinegar Sweet and tangy, complements the salad.
  • 1 tablespoon honey (or agave) Balances acidity.
  • 1/2 teaspoon sea salt Enhances overall flavors.
  • 1/4 teaspoon black pepper Adds a hint of spice.

Instructions
 

Preparation

  • Cook the edamame according to package instructions.
  • While the edamame cooks, steam or sauté the corn until heated through.
  • Dice the red bell pepper, finely chop the red onion, and slice the green onion.

Dressing

  • In a mason jar, mix lime juice, avocado oil, red apple vinegar, cilantro leaves, honey (or agave), sea salt, black pepper, and cumin.
  • Seal the jar and shake vigorously until smooth.

Assembly

  • Combine cooked edamame, corn, and chopped vegetables in a large mixing bowl.
  • Pour the dressing over the salad mixture and toss until evenly coated.
  • Garnish with extra cilantro before serving.

Notes

For best flavor, allow the salad to chill for about 30 minutes before serving. Feel free to add other colorful vegetables or proteins as desired.
