Ingredients

  • 8 cups chopped spinach Fresh and tender leaves
  • 2 roma tomatoes Diced
  • 1 red bell pepper Diced
  • 1 habanero pepper Chopped for heat
  • 1/4 cup onions Sautéed until translucent

Meat and Fats

  • 12 ounces cooked meat Goat meat or preferred protein
  • 1/2 cup palm oil Adds richness to the stew

Mushrooms and Broth

  • 2 cups mushrooms Adds earthy flavor
  • 1/4 cup water or stock For consistency

Spices

  • 1 teaspoon bouillon powder For flavor depth
  • 1/2 teaspoon cayenne pepper Add more for heat
  • 1 teaspoon black pepper
  • 1 teaspoon ground crayfish For added seafood flavor
  • to taste salt Season as desired

Instructions
 

Preparation

  • Gather all your ingredients.
  • Chop the spinach finely.
  • In a large pot, heat the palm oil until it shimmers.
  • Add the chopped onions and stir until they soften and become translucent.

Cooking

  • Add diced tomatoes, red bell pepper, and chopped habanero pepper. Allow to simmer.
  • Stir in the cooked meat and mushrooms.
  • Pour in the water or stock and add bouillon powder, cayenne pepper, black pepper, ground crayfish, and salt.
  • Let everything simmer until the spinach wilts and the stew thickens.
  • Serve hot over rice or with fufu.

Notes

For a healthier version, reduce palm oil or replace with lighter oil. You can also use additional vegetables or plant-based proteins for variations.
