  • 2.5 cups all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup granulated sugar
  • 2 tablespoons fresh orange zest
  • 1 cup vegetable oil
  • 0.75 cup freshly squeezed orange juice Reserve for the glaze.

  • 1 tablespoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it or lining it with parchment paper.
  • Zest and juice three large oranges, setting the zest aside for later use.

Mixing

  • In a large mixing bowl, combine the flour, baking powder, and salt. Whisk together.
  • In a separate bowl, combine the granulated sugar and the fresh orange zest, rubbing them together to release the oils.
  • Add the vegetable oil, orange juice, eggs, and vanilla extract to the sugar-zest mixture and whisk until well combined.
  • Pour the wet ingredients into the dry ingredients and fold them together until just combined to ensure the cake remains fluffy.

Baking

  • Transfer the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick comes out with a few moist crumbs.

Glazing

  • While the cake bakes, prepare the glaze by whisking together the powdered sugar, orange zest, and enough orange juice until smooth and pourable.
  • Allow the cake to cool for about 10 minutes before pouring the glaze over it.

Notes

Use organic oranges for best flavor and don't skip the zest. You can add a pinch of nutmeg or cinnamon for an enhanced flavor.
