Ingredients

For the Tiramisu

  • 2 cups Fresh Raspberries Plus extra for garnish. Can use frozen raspberries if fresh are unavailable.
  • 1 cup Mascarpone Cheese Can substitute with cream cheese for a lighter texture.
  • 1 cup Heavy Cream Consider using half-and-half or coconut cream for a lighter option.
  • ¾ cup Powdered Sugar Agave syrup or honey can be used as a natural sweetener.
  • 1 teaspoon Vanilla Extract Almond extract can add a unique flavor twist.
  • 24 pieces Ladyfinger Cookies Sponge cake or pound cake can be used if ladyfingers are not available.
  • ½ cup Coffee, brewed and cooled For a non-caffeinated version, use brewed herbal tea.
  • Cocoa Powder For dusting; grated dark chocolate can also be used.

For the Raspberry Sauce

  • 1 cup Fresh Raspberries
  • 2 tablespoons Granulated Sugar
  • 1 tablespoon Lemon Juice Reminds you of sunny afternoons.

Instructions

Preparation

  • Prepare the Raspberry Sauce: In a small saucepan, combine 1 cup of fresh raspberries, 2 tablespoons of sugar, and 1 tablespoon of lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally until the mixture thickens. Remove from heat and let it cool completely.
  • Make the Cream Mixture: In a large mixing bowl, whisk together 1 cup of mascarpone cheese, 1 cup of heavy cream, ¾ cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Use a hand mixer for a fluffier consistency.
  • Prepare the Coffee: Brew ½ cup of coffee and let it cool. For an adult twist, add a splash of coffee liqueur if desired.

Assembly

  • Soak the Ladyfingers: Dip each ladyfinger briefly into the cooled coffee, ensuring they are soaked but not soggy.
  • Layer the Tiramisu: In a 9×9-inch dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone cream mixture over the ladyfingers and drizzle half of the raspberry sauce over the cream layer.
  • Repeat the Layers: Repeat the layers with the remaining ingredients, finishing with the cream on top.
  • Chill the Dessert: Cover the dish with plastic wrap and refrigerate for at least 60 minutes.
  • Final Touches: Before serving, dust the top with cocoa powder or grated chocolate and garnish with fresh raspberries.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze portions wrapped tightly. Thaw in the refrigerator overnight before serving. Consider low-sugar sweeteners or dairy-free options for healthier alternatives.
