Frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan.
  • In a medium bowl, mix the melted butter and granulated sugar until well combined.
  • Add the eggs and vanilla extract into the butter-sugar mix, stirring until it becomes a smooth batter.
  • In another bowl, sift together the cocoa powder, flour, salt, and baking powder.
  • Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
  • Gently fold in the semi-sweet chocolate chips and, if desired, the peppermint extract.
  • Pour the batter into your prepared baking pan and spread evenly.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Let the brownies cool completely in the pan on a wire rack.

Frosting

  • Beat the softened butter until creamy. Gradually add in the powdered sugar, heavy cream, vanilla extract, and peppermint extract.
  • Mix until smooth and luscious.
  • Spread the frosting generously over the cooled brownies and finish with red and green decorating sprinkles.

Notes

For chewier edges, use a metal pan instead of glass, and don’t overbake. Freeze brownies in an airtight container for up to three months.
