Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Pat the chicken dry with paper towels to ensure crispy skin.
  • In a small bowl, mix together olive oil, salt, pepper, garlic powder, thyme, rosemary, and oregano.
  • Generously apply the herb mixture over the chicken, ensuring to get underneath the skin.
  • Stuff the chicken's cavity with the halved lemon and crushed garlic cloves.
  • Place the chicken breast side up in a roasting pan, tie the legs with kitchen twine, and tuck the wing tips against the body.

Cooking

  • Roast the chicken in the oven for about 1 hour and 15 minutes, until the internal temperature reaches 165°F (75°C) and juices run clear.
  • Let the chicken rest for 10-15 minutes after roasting to allow the juices to redistribute.

Serving

  • Garnish the roasted chicken with fresh rosemary and thyme before serving.
