Main Ingredients

  • 2 pounds shrimp, peeled and deveined The star of the dish.

Preparation

  • In a large glass or plastic bowl, whisk together the olive oil, minced garlic, dried oregano, dried basil, kosher salt, freshly ground black pepper, and lemon zest.
  • Add the peeled and deveined shrimp to the bowl and toss to coat them evenly with the marinade. Cover and refrigerate for 1 to 3 hours.

Cooking

  • Preheat your oven to 400°F (200°C).
  • Toss the marinated shrimp with the grated Parmesan cheese until they are fully coated.
  • Transfer the shrimp and cheese mixture to a baking sheet and spread in a single layer.
  • Roast the shrimp for about 8 minutes, or until they are pink, firm, and cooked through.
  • Drizzle with a little extra olive oil and sprinkle with chopped parsley before serving.

Notes

Avoid overcooking the shrimp to prevent a rubbery texture. Feel free to customize seasonings. If short on time, marinate earlier in the day.
