Ingredients
  

For the wedges

  • 2 large sweet potatoes (washed and unpeeled)
  • 3 tbsp olive oil
  • 5 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 1 tbsp cornstarch (optional, for extra crisp)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp chopped fresh rosemary (or thyme)
  • 2 tbsp fresh parsley (chopped, for garnish)
  • ½ cup Greek yogurt or mayo
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • Salt to taste

Instructions
 

Preparation

  • Wash the sweet potatoes to remove dirt and slice them into wedges about ½ inch thick.
  • Preheat the oven to 425°F (220°C).

Seasoning

  • In a large bowl, combine olive oil, minced garlic, cornstarch (if using), salt, black pepper, and chopped rosemary or thyme.
  • Add the sweet potato wedges to the bowl and toss gently until well-coated.

Baking

  • Spread the sweet potato wedges on a baking sheet lined with parchment paper and bake for about 25-30 minutes, flipping halfway through.

Finishing Touches

  • Sprinkle the grated Parmesan cheese over the hot wedges immediately after baking.
  • Transfer to a serving platter and drizzle with a mixture of Greek yogurt (or mayo) and lemon juice. Garnish with additional garlic powder and fresh parsley.

Notes

For extra crispiness, soak the wedges in water for 30 minutes before seasoning. Experiment with herbs and spices to match your taste. Serve with dips like spicy ketchup or tzatziki.
