Preparation

  • Preheat your oven to 400°F (200°C).
  • Cut the eggplant into 1-inch cubes and place them in a large bowl.
  • Drizzle the eggplant with olive oil, then add minced garlic, salt, black pepper, and oregano. Toss until evenly coated.
  • Spread the seasoned eggplant evenly onto a parchment-lined baking sheet, ensuring pieces are not overcrowded.

Roasting

  • Place the baking sheet in the preheated oven and roast for 25-30 minutes.
  • Toss the eggplant halfway through the roasting time for even cooking.
  • Remove once golden brown and crispy. Serve warm.

Notes

Allow eggplant to marinate in oil and seasoning for up to an hour before roasting for deeper flavor. This dish pairs well with tahini sauce, couscous, or grilled meats.
