Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • vegetable oil for frying sufficient amount for deep frying

For the Sauce

  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp hoisin sauce
  • 2 tbsp sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6-8 pieces dried red chilies adjust based on spice preference
  • 1 tsp sesame oil

For Garnish

  • 2 pcs green onions, sliced

Preparation

  • Start by trimming the chicken thighs into bite-sized pieces.
  • In a mixing bowl, combine cornstarch and flour. Dip each piece of chicken into the beaten eggs then coat generously in the cornstarch and flour mixture.

Cooking

  • Heat vegetable oil in a deep pan until hot. Fry the chicken pieces in batches until they achieve a golden, crunchy finish. Drain on paper towels.
  • In a separate pan, combine soy sauce, rice vinegar, hoisin sauce, sugar, minced garlic, grated ginger, and sesame oil. Add the dried red chilies and let it simmer until it thickens.
  • Add the crispy fried chicken into the sauce and toss gently to coat.

Serving

  • Serve hot, garnished with sliced green onions, over a bed of steamed rice.

Notes

Consider serving with fried rice, steamed broccoli, or crispy spring rolls. To make a lighter version, use less sugar or substitute with natural sweeteners.
