Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and grease a muffin tin with olive oil.
  • In a large bowl, stir together the all-purpose flour, instant yeast, and salt.
  • Pour in the warm water and 2 tablespoons of olive oil, stirring until a shaggy dough forms.
  • Cover the bowl with a clean kitchen towel and let the dough rise for about 45 minutes, or until it doubles in size.

Topping & Baking

  • In a small bowl, mix together minced garlic, chopped rosemary, a drizzle of olive oil, flaky sea salt, and black pepper.
  • Once the dough has risen, gently punch it down and divide it among the muffin cups, filling each about ¾ full.
  • Spoon the garlic-rosemary mixture generously over the dimples in your muffins.
  • Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown and fragrant.
  • Allow the muffins to cool for about 5 minutes in the tin before transferring them to a wire rack.

Notes

For best results, use warm water at approximately 110°F to activate the yeast effectively. Sprinkle Parmesan cheese on top before baking for extra flavor.
