Instructions
 

Preparation

  • In a large pot over medium heat, sauté the chopped onion, minced garlic, diced carrot, and celery stalk until they become softened and fragrant.
  • Add the turmeric and grated ginger to the pot, stirring well for another minute.
  • Carefully stir in the lentils, allowing them to mix with the sautéed vegetables. Then pour in the vegetable broth and water, giving everything a good stir before raising the heat to bring the mixture to a boil.

Cooking

  • Once boiling, reduce the heat, cover the pot, and let it simmer for about 30 minutes or until the lentils are tender and cooked through.
  • After the lentils are perfectly cooked, squeeze the lemon juice and add the zest to the pot. Season your soup with salt and pepper to taste, mixing well to incorporate the bright flavors.

Serving

  • Serve the soup warm in bowls, garnished with freshly chopped herbs.

Notes

For added flavor, sprinkle a pinch of chili flakes or blend half of the soup for a creamy texture. This recipe is vegan and can be prepped ahead of time.
