Preparation

  • In a large bowl, gently mix together the ground chicken, egg, feta, oregano, basil, onion powder, garlic powder, dill, parsley, salt, and pepper.
  • Divide the mixture into 15 portions and roll them into uniform meatballs.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the meatballs carefully, leaving space between them. Sear for about 5-6 minutes until they are golden brown, turning occasionally for an even color.
  • Cover the pan and cook for an additional 5-6 minutes or until the internal temperature reaches 165°F.
  • While the meatballs are cooking, follow the package directions to bring the orzo to perfection.

Mixing and Serving

  • In a large bowl, combine the cooked orzo with lemon zest, juice, olive oil or butter, parmesan, and all seasonings.
  • Plate the warm meatballs triumphantly over the seasoned lemon orzo. Drizzle with olive oil if desired and serve immediately.
