Preparation

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine ground chicken, egg, feta cheese, and all the dry seasonings. Mix gently with your hands to avoid overworking the meat; this helps keep the meatballs tender.
  • Using wet hands, roll the mixture into 20-24 equal meatballs and place them evenly on the baking sheet.

Cooking

  • Bake the meatballs for 18-20 minutes, until golden and cooked through, ideally reaching an internal temperature of 165°F (74°C).
  • Meanwhile, cook the orzo in boiling salted water according to package instructions, usually around 8 minutes. Reserve ½ cup of the pasta cooking water and drain the orzo.
  • In a bowl, mix the drained orzo with lemon juice, zest, olive oil or melted butter, and optional Parmesan cheese. Season with salt, pepper, and dill, mixing well.
  • Adjust the creaminess with reserved pasta water if needed for your desired consistency.
  • To serve, plate the lemon orzo and top with the golden meatballs. Garnish with fresh herbs and additional lemon zest.
