Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the halved baby potatoes, olive oil, dried oregano, salt, and pepper. Toss until the potatoes are well coated.
  • Spread the potatoes in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for about 30-35 minutes, or until golden brown and tender, flipping halfway through.
  • Remove from the oven and sprinkle the crumbled feta cheese over the hot potatoes.
  • Return to the oven for an additional 5 minutes or until the feta is slightly warmed.
  • Garnish with chopped parsley before serving.

Notes

To elevate flavors, consider adding sliced olives or roasted garlic. For crunch, sprinkle herb mixed breadcrumbs over the feta before returning to the oven. Adjust seasonings as per taste.
