  • 2.5 cups water or beef broth Use a rich broth for depth.
  • 1 stick cinnamon or ¼ tsp ground cinnamon Adds warmth to the dish.

Preparation

  • Heat the olive oil in a large pot over medium-high heat. Add the beef stew meat, browning on all sides.
  • Once the beef is browned, add chopped onion and minced garlic, sautéing until the onion is translucent.
  • Stir in the tomato paste and let it cook for a minute.
  • Add crushed tomatoes and broth or water into the pot and stir well.
  • Season with cinnamon, bay leaf, salt, and pepper. Reduce heat to low and simmer uncovered for 25-30 minutes.
  • Stir in the orzo and cook for an additional 10 minutes, stirring often to prevent overcooking.
  • Remove from heat and let it sit for a few minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

Serve Greek Manestra with a crusty loaf of bread or a light green salad. It freezes well for later enjoyment.
