  • 2-3 Green Onions Use white and light green parts for mild onion flavor.
  • 2 cloves Garlic Adds depth and savory flavor.
  • 2 tablespoons Lemon Juice, fresh For brightness and zest.
  • 1 teaspoon Lemon Zest Enhances citrus notes.
  • Salt, to taste Start with a small amount, adjust after blending.
  • Black Pepper, to taste, freshly ground Adds earthy spice to the flavor.

Instructions
 

Preparation

  • Drain the brine from the feta cheese and pat it dry with paper towels to eliminate excess moisture.
  • Crumble the feta into smaller pieces for easier blending.

Blending

  • In a food processor, combine crumbled feta cheese and olive oil.
  • Pulse to break up the feta, then process until smooth and creamy.

Adding Flavors

  • Add the fresh herbs, garlic, lemon juice, and lemon zest to the food processor.
  • Blend until all ingredients are well incorporated and the mixture is green and smooth.

Seasoning

  • Season with salt and freshly ground black pepper, adjusting to taste.

Chilling

  • Transfer the dip to a serving bowl, cover, and chill in the refrigerator for at least 30 minutes.

Serving

  • Garnish with a swirl of olive oil or a sprinkle of fresh herbs, and serve with dippers such as vegetables, pita, crackers, or bread.

Notes

For a lighter version, consider swapping half or all of the feta with Greek yogurt. To add new flavors, consider using dill or roasted red peppers. Avoid excess moisture by draining the feta well.
