Preparation

  • In a large saucepan over medium heat, combine the natural peanut butter, melted coconut oil, and cocoa powder. Stir continuously until everything melts and melds into a divine chocolatey mixture.
  • Remove the pan from heat and add honey and vanilla extract, mixing well until everything is uniform.
  • Stir in quick oats until every oat is coated with the chocolatey mixture.
  • Transfer the pan to the refrigerator and chill for about 30 minutes until the batter becomes firmer.
  • Once chilled, portion out the mixture and form into round cookie shapes.
  • In a microwave-safe bowl, heat dark chocolate chips with coconut oil in 30-second increments, stirring until melted and smooth.
  • Drizzle the melted chocolate over each formed cookie.
  • Place the tray of cookies back into the refrigerator for about an hour before serving.
