Preparation

  • Start by chopping your onions, garlic, ginger, and cilantro. Set them aside. Cut the chuck or braising steak into bite-sized pieces for even cooking.

Cooking

  • In a skillet over medium heat, add your oil or ghee. Once hot, add the chopped onions, garlic, and ginger. Sauté until the onions turn translucent and fragrant, about 5 minutes.
  • Stir in ground turmeric, coriander, garam masala, cumin, and red chili powder into the sautéed aromatics. Cook for an additional minute, allowing the spices to bloom.
  • Place the beef in the slow cooker, followed by the sautéed mixture. Add the cinnamon stick, bay leaf, beef broth, and water. Stir well to combine all the ingredients.
  • Cover and set your slow cooker on low for 6-8 hours or high for 4 hours. The longer it cooks, the more tender the beef will become.
  • Once cooked, check the seasoning and add salt as desired. Remove the bay leaf and cinnamon stick before serving.
  • Garnish with chopped cilantro, and enjoy your warm curry!

Notes

Marinate the meat beforehand for deeper flavor. Add vegetables for nutrition, and consider thickening the sauce for a preferred consistency. Serve with naan or basmati rice for a complete meal.
