Ingredients
  

For the Pink Sponge

  • 250 g butter, softened Luxuriously rich and creamy for the perfect texture.
  • 250 g caster sugar Fine sugar that ensures a smooth batter.
  • 3 large eggs Fresh eggs add structure and moisture.
  • 250 g plain flour The foundation of your cake that provides stability.
  • 1 tsp baking powder Essential for that tender crumb.
  • 1 tsp raspberry extract A burst of fruity flavor that enhances the cake.
  • 1/2 tsp pink food colouring For a visually engaging faux ‘heart’ effect.

For the Vanilla Loaf

  • 300 g butter, softened Even more creaminess for the vanilla loaf.
  • 300 g caster sugar Sweetness to balance flavors.
  • 4 large eggs For richness in this layer.
  • 300 g plain flour To keep the structure consistent.
  • 1 tsp vanilla extract Adding classic, warm vanilla flavor.

For the Icing and Decoration

  • 200 g icing sugar For a sweet, creamy topping.
  • 2-3 tbsp milk To smooth out the icing.
  • 100 g freeze-dried raspberries A lovely tartness and beautiful decoration.
  • 100 g fresh raspberries Freshness to complement the cake visually and taste-wise.

Instructions
 

Preparation

  • Preheat the oven to 180°C and line a 2lb loaf tin with non-stick baking paper.
  • For the pink sponge hearts, cream the butter and sugar together until soft and fluffy, about 3-5 minutes.
  • Add the eggs one by one, mixing well after each addition.
  • Mix in the raspberry extract and pink food coloring until vibrant.
  • Combine the flour and baking powder in a separate bowl and gently fold into the wet ingredients.
  • Pour the pink batter into the prepared loaf tin and bake for 45-50 minutes or until a skewer comes out clean. Allow to cool completely.

Heart Cutouts

  • Once the pink sponge is cool, slice it into 2-3 cm thick slices and cut out heart shapes using a cookie cutter.

Vanilla Loaf Cake

  • Repeat the same steps using the vanilla loaf ingredients, omitting the raspberry extract and food coloring.

Assembly

  • Pour 1/4 of the vanilla loaf batter into the bottom of the prepared loaf tin and stand the heart cutouts in a row down the middle.
  • Use a piping bag to pipe the remaining batter on top of the hearts.
  • Bake for another 45-55 minutes and let cool completely before decorating.

Icing

  • Mix the icing sugar with milk and vanilla extract until thick but pourable.
  • Pour the icing over the cake, allowing it to drip down the sides, and scatter freeze-dried and fresh raspberries on top.

Notes

Try using a combination of freeze-dried raspberries and edible glitter for a festive touch. Ensure the heart cutouts are spaced evenly for an attractive reveal when the cake is sliced. Cool cake thoroughly before icing to prevent melting.
