Ingredients
  

For the roasted sweet potatoes

  • 1.5 pounds sweet potatoes, peeled and diced into ½-inch cubes
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

For the ground beef

  • 1.5 pounds lean ground beef
  • 1 tablespoon avocado oil
  • 3 cloves garlic, minced
  • 0.5 medium yellow onion, finely diced
  • 2 tablespoons taco seasoning
  • 0.5 teaspoon cumin
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

For the hot honey drizzle

  • 1 third cup honey
  • 1 tablespoon hot sauce
  • 1 teaspoon red pepper flakes
  • 1 tablespoon unsalted butter

For assembly

  • 2 cups low-fat cottage cheese
  • 1 ripe avocado, sliced
  • 2 tablespoons chopped fresh cilantro

Instructions
 

Preparation

  • Preheat your oven to 425°F (218°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine diced sweet potatoes with avocado oil, garlic powder, onion powder, smoked paprika, ground cinnamon, kosher salt, and black pepper. Toss until well-coated.

Roasting Sweet Potatoes

  • Spread sweet potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and fork-tender.

Cooking Ground Beef

  • In a large skillet, heat 1 tablespoon of avocado oil over medium-high heat. Add minced garlic and diced onion; cook for 2-3 minutes until softened.
  • Add ground beef, breaking it apart. Season with taco seasoning, cumin, salt, and black pepper. Cook for 8-10 minutes until browned and reaches an internal temperature of 165°F (74°C).

Preparing the Hot Honey Drizzle

  • In a small saucepan, melt unsalted butter over medium-low heat. Whisk in honey, hot sauce, and red pepper flakes. Simmer for 3-4 minutes until slightly thickened.

Assembling Bowls

  • Layer roasted sweet potatoes and seasoned ground beef in each bowl.
  • Add a scoop of cottage cheese, followed by sliced avocado and chopped cilantro.
  • Finish with a drizzle of the hot honey and serve immediately with lime wedges.

Notes

For added flavor, consider marinating the ground beef in preferred spices the night before. This dish is versatile and can be customized with different toppings.
