Hocus Pocus S'mores Pops

Ingredients
  

For the S'mores Pops

  • 12 pieces Graham crackers, halved Provides the perfect crunch.
  • 1/2 cup Marshmallow creme Provides gooey sweetness.
  • 2 cups Semisweet chocolate chips For coating the pops.
  • 3 tablespoons Coconut oil Used to melt with chocolate for smooth consistency.
  • 1 bag Candy eyes For decoration.
  • 1 container Black cookie frosting Used for decorating the pops.

Instructions
 

Preparation

  • Spread about 1 tablespoon of marshmallow creme on half of the graham crackers. Place a popsicle stick halfway on the creme, then top with another halved graham cracker, making a sandwich. Chill these on a parchment-lined baking sheet.

Chocolate Coating

  • In a heatproof bowl, microwave chocolate chips and coconut oil in 20-second increments until melted and smooth, stirring in between. Dip each sandwich into the melted chocolate, coating generously. Stick a candy eye on each 'book' before placing back on the baking sheet.

Decoration

  • Use the black cookie frosting to decorate around each candy eye and add stitches on the chocolate areas if desired.

Setting

  • Chill the decorated pops in the refrigerator for about 15 minutes until set.

Notes

These pops can be made ahead of time and stored in an airtight container for up to a week. They can also be frozen for 2-3 months.
