Preparation

  • Season the beef cubes with salt, pepper, and flour in a large bowl, coating evenly.
  • Heat oil in a large pot over medium-high heat.

Cooking

  • Sear the beef in batches until browned on all sides; remove and set aside.
  • Sauté the chopped onions until softened, about 5 minutes, then add minced garlic and cook for an additional 30 seconds.
  • Add sliced carrots, cubed potatoes, and chopped celery; sauté for 5 minutes.
  • Return the beef to the pot, add beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf, then bring to a boil.
  • Reduce heat to low, cover, and let simmer for 1.5 to 2 hours.
  • Remove bay leaf and serve hot, garnished with fresh parsley.
