Preparation

  • In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until well combined.
  • In another large mixing bowl, combine the vegetable oil and granulated sugar. Mix until light and fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the buttermilk, red food coloring, and vanilla extract.
  • Gradually add the dry ingredient mixture into the wet mixture, stirring gently until just combined.

Baking

  • Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

Frosting

  • Beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  • Once the cakes are cooled, spread the frosting generously between the layers and on top of the cake.

Notes

For perfect results, use room temperature ingredients and avoid overmixing to maintain a light texture. Consider adding espresso powder for a richer flavor.
