Preparation

Mixing

  • In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix together the wet ingredients: milk, vegetable oil, egg, and vanilla extract.
  • Pour the wet mixture into the dry mixture and mix gently until just combined—don’t overmix!
  • Stir in the hot water until the batter is smooth; it may be thin.

Baking

  • Pour the batter into prepared mugs, filling them halfway. Bake for about 15-18 minutes.
  • Use a toothpick to test doneness; if it comes out clean, they are ready!
  • Top warm cupcakes with marshmallows and return to the oven for an additional 2-3 minutes until slightly soft.

Notes
