Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a medium microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 20-second intervals, stirring in between, until melted and smooth.
  • Stir in the granulated sugar until combined, then whisk in the eggs one at a time after cooling slightly.
  • Gently fold in all-purpose flour, salt, and vanilla extract until well combined.
  • Generously grease ramekins with butter or non-stick spray and dust with flour.
  • Pour the batter evenly into the ramekins, filling them about three-quarters full.

Baking

  • Bake the ramekins for 12-14 minutes until the edges are firm but the center is soft.
  • Let the cakes cool for a minute, then run a knife around the edges and invert onto plates.

Serving

  • Dust with powdered sugar, and serve with fresh berries, chopped nuts, and sea salt flakes.

Notes

For a lighter version, substitute half the butter with applesauce or Greek yogurt. Ensure to not overbake for a perfect molten center.
