Preparation

  • Gather all your ingredients and ensure your jalapeños are finely chopped.
  • In a medium saucepan, combine the granulated sugar, corn syrup, and water. Stir gently until the sugar dissolves completely.

Cooking

  • Place the saucepan over medium heat. Allow the mixture to boil without stirring until it reaches a golden amber color, approximately 300°F (149°C). This takes about 10-15 minutes.
  • Carefully stir in the peanuts, chopped jalapeños, salt, and butter. Mix thoroughly.
  • Remove from heat and quickly stir in the baking soda. Be mindful of bubbling.
  • Immediately pour the mixture onto a greased baking sheet. Use a spatula to spread it evenly.
  • Allow to cool completely before breaking into pieces.

Notes

Store in an airtight container to maintain crunch; freeze portions for longer shelf life.
