  • ½ head green cabbage, finely chopped About 4 cups
  • ½ medium carrot, finely chopped
  • 2 tbsp buttermilk
  • tsp white vinegar
  • tbsp finely chopped onion
  • 2 tbsp whole milk
  • ¼ cup mayonnaise
  • 2 tsp lemon juice
  • 4 tsp sugar
  • ¼ tsp salt
  • tsp black pepper

Preparation

  • Pulse the cabbage and carrot in a food processor until finely chopped into tiny squares.
  • In a separate bowl, whisk together mayonnaise, buttermilk, milk, vinegar, lemon juice, sugar, salt, and black pepper until smooth.
  • Pour the dressing over the chopped vegetables and stir well.
  • Allow to chill for at least 30 minutes before serving for best flavor.

Notes

For a low-sugar option, consider reducing sugar or using a substitute. For a dairy-free version, replace buttermilk with almond milk mixed with vinegar.
