Preparation

  • Preheat your oven to 475°F (245°C).
  • Roll out the pizza dough on a floured surface to your desired shape and thickness.
  • Place the rolled-out dough on a pizza stone or baking sheet, ensuring it's well-floured.
  • Brush the dough with olive oil and season with salt and pepper.

Assembly

  • Spread the ricotta cheese evenly over the base.
  • Sprinkle the mozzarella cheese over the ricotta.
  • Arrange the thin lemon slices over the cheese.
  • Sprinkle fresh thyme on top.

Baking

  • Bake in the preheated oven for 10-15 minutes, or until crust is golden brown and cheese is bubbly.
  • Remove from the oven and let cool slightly.
  • Add arugula on top if desired, slice, and serve.

Notes

Use a pizza stone for an extra crispy crust. You can also add goat cheese or provolone for variation, or incorporate lemon zest into the ricotta for a citrus kick.
